A minced mixture of low fat ingredients: prime veal chunks which have been butchered on the TDB premises with duck and beef offal. This veal is aged up to 12 months and is not crate kept.

The ratio is 80% meat, comprising of 75% veal meat, 5% duck meat 10% bone, from duck neck 5% ox liver, 5% ox kidney or spleen.
